yellow mung (split)

The most digestible of pulses, or legumes or dhal. The dance partner of basmati rice in Kitcheree (see Cleanses).

Mung is nutritious and the best legume for all. It is the only sattvic bean. Excellent in the summer (pitta)and drying in the wet of spring (kapha). When well cooked with spices, especially ginger and asafeotida, it is wonderful for autumn (vata) too. Very good for convalescence, after childbirth (as kitcheree), and as the basis of detox and  seasonal cleanses.
