Eggplant or Aubergine – a native to India and travelled to Europe in 14th century. it is a heart tonic, appetite stimulant, and a mild laxative and diuretic. It may assist to lower cholesterol, diabetes, an anti carcinogen and help with dullness of vision.
It MUST be cooked well. Many restaurants fail to do this…never an Indian or a Greek! Roasted it, steam it, fry it but always it must be very soft and unctuous and it is delicious.
