I do not use onion very much in my cooking. I appreciate it, along with garlic more as a medicine than a food. And as a ‘yogi’ (one who meditates and has a yoga posture practice) I seek a refined level of health. Onions (and garlic) no doubt are good for broad spectrum health. I use onion in my cooking when I am working hard physically or if I feel too ‘delicate’. If we do not use the stimulation from onions (physically) there is a tendency for the energy to move upward to the head ie we think more than is necessary.
Also, they are a very strong taste and overpowers most others…. I use asafeotida in their place often. And therefore use lesser amounts of spices for more subtlety in the final result.
